400g ground nuts
165ml maple syrup
50ml unflavored oil
30g sugar free applesauce
100g dried apricots
Zest of 2 oranges
orange oil
2TL gingerbread spice
1 pinch of salt
(wafers – but does not have to be)


Preheat oven to 175degrees Celsius.

  1. as preparation, put the apricots in a heatproof bowl and pour hot water over them. Let stand for 15 minutes.
  2. put the ground nuts, maple syrup, oil, applesauce, orange zest, orange oil, gingerbread spice and salt in a bowl and mix well. Drain apricots and cut into small pieces. Add to the dough and mix well again. Depending on the moisture content, add a bit of applesauce again. The dough is rather sticky and should not be too dry.
  3. line baking tray with baking paper. If you are using wafers, line them. Form the wafers from the dough with a spoon. Bake in the oven for 15-20min. Remove and let cool completely.
  4. I used vegan chocolate for the glaze.
